The docs do indeed contain the relevant information. You need to disable
automatic port selection, via the AutoPortSelect key or the Properties
dialog, then change the PortNumber key to the value you want. If the key
isn't there already and you aren't happy creating it yourself, just run
WinVNC with AutoPortSelect off and when it quits it will create one.
Remember that the port number you select is directly linked to the "display
number" the server claims to run as, so that port 5900 is display 0, port
5901 is display 1, etc.
